Prawn Bisque Recipe - CHU Collagen Prawn Mee Soup

 

Ingredients

1 packet CHU Collagen Premium Prawn Mee Soup
1 onion, diced
1 carrot, diced
1 celery stalk, chopped
3 cloves garlic, chopped
2 cloves shallot, chopped 
30g unsalted butter
1 tbsp tomato paste
3 bay leaves 
Thickened cream
Italian herbs (optional) 
5 prawns, deshelled (optional) 

Instructions

  1. Heat up butter in pot. Add garlic and fry till fragrant.  
  2. Add carrot, onion and celery. Fry with small-medium heat until softened. Be careful not to brown the ingredients. 
  3. Add shallot and tomato paste. Mix well. 
  4. Add bay leaves. 
  5. Add prawns if desired. 
  6. Cook for another few minutes to ensure that prawn is cooked and ingredients are softened. 
  7. Add Prawn Mee Soup. 
  8. Mix well and bring to a boil. 
  9. Switch off fire and let it cool for a few minutes. 
  10. Add soup and ingredients to a blender and blend well. 
  11. Put soup back in the pot and add thickened cream until desired consistency is reached. 
  12. Serve. Sprinkle Italian herbs if desired. 

Protips:

  1. Try before serving. If it is too spicy, add more cream. 
  2. For a smoother consistency, put the soup through a strainer into the pot after blending. Be sure to squeeze and and mash out as much liquid as possible for maximum flavour.
